Sweet Potato Hash Recipe

I want to take a break from giving you so many workouts and give you all a delicious way to recover! This recipe is by far my favorite thing to eat for breakfast these days – or lunch or dinner!

JYM Girl Sweet Potato Hash Recipe

1 sweet potato (medium)
2-3 eggs
½ jalapeno
½-1 tablespoons olive oil
½ onion
¼ bell pepper
1 cup of spinach
Any other veggies you want to add!
Salt & pepper, to taste
Chili powder, to taste

Cut sweet potato into small cubes. Slice the veggies up as well. Put the sweet potato and veggies in a pan (preferably a cast-iron skillet – it tastes better, trust me!). Add the olive oil to the pan. Sauté the sweet potatoes and veggies until tender. When this is almost done, start cooking eggs in a different pan.

Make the eggs over-easy for best results! 😊If you want to add regular potatoes or red potatoes to this, that works, too. When everything is done, put the sweet potatoes and veggies in your bowl first, then put the eggs on top. Bust the eggs and let them ooze all over the sweet potatoes… and you’re welcome! 😊
