Easy-Prep Recipes

I want to take a break from talking about “fad diets” and talk about how to be successful with your own diet!

Eating well doesn’t have to be hard. Here are some “easy-prep” recipes anyone can handle.

Easy-Prep Meal #1: Chicken, Sweet Potatoes & Brussels

1-2 lbs. of chicken
3-5 sweet potatoes
0.5-1 lb. of Brussels sprouts
Chipotle aioli
Olive oil spray

Directions: First, bake your chicken in the oven for 30-40 minutes at 350 degrees F. The seasoning I use is salt, pepper, and a little squeeze of lemon.

Next, cut up your raw sweet potatoes so they kind of look like “fries.” Place them on parchment paper and spray them with olive oil spray. Next, shake some salt over all of the “fries.”

On another baking sheet, cut your Brussels sprouts in half and place them on another sheet of parchment paper. Spray them with olive oil. Then, shake some salt and pepper over all of the Brussels sprouts. Finally, squeeze some lemon over them to finish.

Bake the sweet potato fries and Brussels sprouts in the oven at 350 degrees for about 40 minutes. For the sweet potatoes, turn them over about 20 minutes in. The Chipotle aioli is your dipping sauce for your sweet potato fries!

Easy-Prep Meal #2: Turkey Sandwich

2 slices of sourdough or dark rye bread
1-2 slices of cheese of choice (optional)
1 tbsp of Chipotle aioli or mayo
3-4 slices of deli turkey (or your choice of deli meat)
1/4-1/2 avocado
Mustard (optional)

Directions: That’s it – a super simple-to-prepare sandwich. You can pretty much make these every day for lunch if you want. To spice it up, you can mimic “grilling” the bread on the stove to make it like a panini to melt the cheese.

Easy-Prep Meal #3: DIY Burrito Bowl

Diced chicken breast
1/3 cup of corn, cooked
1/2 cup of black beans
1/2 cup of white or brown rice
Sautéed peppers and onions
Lettuce for a topping
1/2 avocado (optional)

Directions: Just take all of these and add them in your Tupperware and you’re good to go. 😊 Super easy!

Good Company for Meal Prep

I want to also give some options for meal prep companies. A lot of people who prefer to use pre-made meals. Some good ones I’ve tried and/or have seen people recommend are: Snap Kitchen, Icon Meals, Trifecta Nutrition, B-Elite Fuel (on bodybuilding.com), and Muscle Maker Grill. There are plenty more, so you can always do your research to find which company you like!

I know you all are busy with family, work, training, or all of the above! These easy-prep recipes are a life-saver for me when things get hectic, so I hope you’ll get great use of out them.
