Bison Stew Recipe

JYM_GIRL_BLOG_Image_smilingThe season is turning and fall is upon us, which means it’s getting chilly out. So I figured this would be a great time to share a recipe for the perfect dish to keep you warm!

Bison is one of my favorite meats because you can easily find leaner cuts if you’re shopping at the right places. Plus, it’s super tasty!

Bison Stew Recipe

1-2 lbs. bison stew meat (I typically get Laura’s lean bison stew meat)
1 medium onion
1-2 sweet potatoes
1½ cup mushrooms
½ cup of shredded cabbage
2 celery stalks
Salt, to taste
Pepper, to taste
Garlic Powder, to taste
Beef Stock, 1 cup (If you do 2 lbs. of meat, do 1½ cups)

First, season the meat with salt and pepper. Then pan sear the meat before adding it to a slow-cooker/Crock-Pot – just brown each side of the meat quickly in a hot pan to help keep the juices in. This should take about a minute to do. Add the meat to the Crock-Pot first and then add the rest of the ingredients. Cook on low for 6-8 hours and… BOOM. Easiest meal ever! It’s pretty darn low-carb too!

Macros: (for entire recipe – 1 pound of meat, 1 sweet potato)
Calories: 780
Protein: 111 grams
Carbohydrates: 45 grams
Fat: 20 grams

As always, you can double or triple the recipe – just don’t forget to adjust the macros! You can always play around with different veggies, too. If you want an even lower carb option, you can sub out the sweet potatoes for carrots. If you want more carbs, you can add more potatoes (even regular if you want) or more starchy veggies such as peas and corn.
